Salt and Pepper Squid ( Calamares)





Ingredients:

85g/ 3 0z cornflour

85g/ 3 oz plain flour

2 tsp cracked blackpepper

400g squid cleaned and cut into strips

salt to taste



For Dipping Sauce:

1 Finely chopped red onion

1 red chilli

100 ml vinegar

1 tbsp caster sugar

2 tsp sea salt to taste



To make the Dipping sauce:
Mix all the dipping ingredients until sugar is dissolve.


Cooking Instruction:

Mix the plain flour, cornflour, blackpepper and salt in a large bowl and set aside.

Season Squid strips with salt to taste.

Heat oil in a deep fryer or wok.

Coat the squid well with the flour mixture and fry in batches for 2 minutes or until crisp.

Use a slotted spoon to lift out squid and drain on kitchen paper.

You can serve squid with chopped chilli or spring onion on top with the dipping sauce on the side.


TIP:

This dish requires last minute deep frying before serving. Best serve hot.

But you can prepare the ingredients ahead.
