Chocolate Love Affair

Cocoa Beans from Rosarios Delicacies (From tree to Beans to Bar)

Chocolate is a ground from the beans of HAPPINESS.

One of my childhood memories back in our province of Ozamis City, Misamis Occidental is a morning cup of sikwate ( hot chocolate) and linupak na saging (mashed banana).
A cup of Sikwate- hot chocolate

This is how we start our day. My Nanay( grandmother) will wake up early to brew tableya (unsweetend chocolated tablets made from cacao beans). The strong aroma of the hot chocolate will really wake you up. What a beautiful morning!

In the afternoon, our merienda was champorado ( sweet rice chocolate porridge with the use of tableya).

Our bonding with our cousins and siblings was under the cacao tree. We would be nibbling the cacao seeds. Our grandmother would always remind us not to through it away as she has to dry it and roast to make her tableya. That was the traditional process of how you come up with a tableya.

Years passes by and everything changes. We rarely visit our lola's home as we moved to a bigger city. Those activities now became childhood memories.

Just recently, I passed by a pasalubong shop in Market Market , Bonifacio Global City and I saw in one of the stands tableya and chocolates made from the Philippines. I checked the label and it is made in Davao City, Philippines.
60% and 80% Dark Chocolate from Rosario's Delicacies

Davao is known forr Durian and its dive spots, but not everyone know that Davao region is now the chocolate capital of the Philippines. Little did we know that Davao supplies at least 81% of the country's total cacao production and home to world class dark chocolates, Davao now is the country's cacao and chocolate capital of the Philippines. This placed Davao on cocoa world map.
There are several chocolate makers in Davao. There's the well known Malagos Chocolates, Rosario's Delicacies and Choco Dulce. Each of those will give you a tree to bar experience.

I was not able to go to Malagos and Choco Dulce due to my tight schedule but I was able to visit Rosario's Delicacies chocolate factory and their Cacao farm. I saw their page and tried searching their location in google maps.  Rosario's Delicacies is located in De Lara St. Agbisit Subdivision, Calinan, Davao City.

So, I  planned to go to their place to see for myself how they make chocolates. I sent them a message through facebook and text and the family is very accommodating.

When I reached the place, I was allowed to enter the house and accommodated by the owners : Mary Grace (Eyet) Belviz and Emmanuel Belviz. The couple are very accommodating. You would feel the homey ambiance of the place as you are welcomed by the sweet smell of Durian and the smell of dried cacao beans.

Unfortunately, there was no production at the time that I went there because they have to do maintenance of their machine but they still showed me the production area.

Rosario's place

The photo below showed the workers segregating the good beans from the rejected ones. Good beans produce good chocolates. Thus quality is a must.

They have their own plantation of cacao where good quality of cacao are harvested and then fermented.

The owner couple were very generous to give me 2 cacao fruit to be brought to my daughter and husband back in Manila. This is not just a pasalubong but I want this to be an educational gift to both of them.

Here are some photos I got regarding the tree to bar process of making the Rosario's Artisan Chocolates.

I really love this place not only that the original owner (Eyet's mother in law)was Rosario. This was named after her.

Here are the following products that they are selling.

They are also selling Durian Yema, Mangosteen Yema and candies and many more.

If you happen to be in Davao, do not fail to visit Rosario's delicacies and Malagos Chocolate Musem. Not only that it is instagramable but it is also educational. You will be truly proud of what we have in  here.

Davao is not just about Durians and the home of our President... it is the home of one of the world class chocolates and a bridge back to our memories of childhood.

Do not also fail to bring home some chocolates when you leave Davao. Giving chocolates is an intimate form of communication, sharing your love and deep dark secrets.
